when roasting coriander seeds – add a small bunch of curry leaves to the lot. you will know the seeds are roasted when the curry leaves are dry and crumble when held. with the flavour so wonderful, you may not even want to take these leaves out!
If you find too much salt in any gravy-add some large pieces of potatoes to the gravy and boil. Once the potatoes have soaked up the extra salt, discard the pieces!
How do you know how long to roast sooji while making laddoos? Add a few raisins while roasting the sooji. When the raisins start swelling up, the roasting is done!
