roasting coriander

Coriander_Seeds_1when roasting coriander seeds – add a small bunch of curry leaves to the lot. you will know the seeds are roasted when the curry leaves are dry and crumble when held.

with the flavour so wonderful, you may not even want to take these leaves out!
